{Bake} Caramel Frosting Brownie Sandwiches

One of my favorite Girls’ Night In movie scenes is from Grease, when Jan pulls out some Twinkies and offers it to her girlfriends sneaking in some wine during a high school slumber party, explaining, “It says right here it’s a dessert wine.”
At a holiday gathering we hosted the other night, we were planning to drink a 2008 Hedges Red Mountain Meritage and needed something sweet to pair it with. Twinkies would have been too light, so we opted for Caramel Frosting Brownie Sandwiches. (Yes, we paired our dessert with our wine instead of the other way around).
I didn’t want to do something too complicated or spend too much time on it, so grabbed a box of brownie mix and decided to give it more flair with some homemade caramel frosting, a dusting of powdered sugar, and a drizzle of caramel sauce.
The results were absolutely delicious: both before and after multiple bottles of wine!
Here’s the recipe:
Ingredients
- Box of brownie mix (like Duncan Hines Dark Chocolate Fudge Brownies)
- Caramel sauce
- 1/2 cup shortening
- 3-4 cups confectioner’s sugar
Step 1
Make your brownies in a muffin tin instead of a pan.
Step 2
Follow my recipe for caramel sauce here. Reserve some of the caramel sauce for drizzling.
Step 3
Beat the caramel sauce, shortening and confectioner’s sugar until you get a nice, thick frosting consistency.
Step 4
Slice your brownies in half and make “sandwiches.”
Or you could just drizzle them with caramel sauce and a bit of powdered sugar.
This is one I secretly made and ate in the kitchen! (Notice the “drizzle” turned into “deluge”).
