{Live} Leftover-Stuffed Bread Bowl

Hubby made a batch of gnocci with sausage the other day and half of the sausage went uneaten. Unlike me, the family is picky about leftovers, so I needed an easy way to repackage the sausage without them noticing and without me having to spend much time cooking or prepping.

We had an Ecce Panis Neo-Tuscan Mini Boule from our latest shop

waiting to be devoured,

 

so I decided to make bread bowls filled with whatever ingredients we had in our refrigerator.

Ingredients

  • Pepperidge Farm Ecce Panis Neo-Tuscan Mini Boules
  • 2 Sausages, chopped
  • 4-6 Celery stalks, chopped
  • 1/2-1/3 Onion, chopped
  • 3-5 Broccoli tops, chopped
  • 1/3 cup cream
  • 1-2 cups chicken broth
  • 1 tbsp unsalted butter
  • olive oil
  • salt
  • pepper

Recipe

  • Hollow out your Ecce Panis Neo-Tuscan Mini Boule, reserving the chunks of bread
  • Over medium-high heat, melt the butter into the olive oil
  • Add the onions,celery, and broccoli, plus salt and pepper to taste, and cook until halfway softened
  • Add cream and chicken broth, then bread chunks and sausage
  • Cook the mixture a few minutes until most of the liquid is absorbed
  • Pour mixture into your bread bowl and enjoy!

This would be a fun way to re-serve your Easter meal leftovers from this weekend, wouldn’t it? You could try this with any kind of meat or simply use leftover or about-to-wilt vegetables for a meat-free version. Adjust the amount of chicken stock you use depending on whether your family prefers a thicker filling or a more soup-like meal.
