{Live} Grilled Cheese: A Childhood Favorite All Grown Up

One of my distinct childhood memories is climbing out of the club pool from swim team practice at 7 years old, and so looking forward to eating a warm, gooey, grilled cheese sandwich, in my still-soaked competition suit with a beach towel wrapped around my shivering shoulders, while the sun beat down on my chlorinated shoulders. Those grilled cheese sandwiches were so good, I used to dream about them at night.

What made them so delicious were the yummy Kraft Singles and the hot, grilled, buttery bread.

We used to make them at home, too, but without the deliciously golden slices of buttered toast. Even without the salty kick of slathered on butter, they were perfectly satisfying (and probably better for you!) and I could never stop at just one. One summer, I even ate them for breakfast and lunch. Every. Single. Day. My favorite way to eat them actually was un-toasted: just a soft slice of bread topped with a Kraft Single, then folded in half and smashed flat. Oh my, I just loved those smooshed sandwiches so.

When I had the opportunity to purchase Kraft Singles recently, I decided to recreate my childhood favorite, but add a few extras just to kick it up a notch. Not that it wouldn’t have been good with just the Kraft Singles and bread!

Ingredients

  • Kraft Singles (my favorite are the 2% Singles)
  • Sliced sourdough bread (or your favorite bread)
  • Butter
  • Traditional dijon mustard
  • Sliced tomatoes
  • Arugula/Rocket leaves
  • Fresh or dried basil

Recipe

Step 1

Heat your butter in a pan over medium-high heat. butter heating in pan

Step 2

Pan grill your bread slices.

Step 3

Carefully add the dijon mustard, then layer the Kraft Singles on top and let them melt in the pan.

Step 4

Plate the cheesy slices and dress them with tomatoes and basil or arugula leaves.grilled cheese sandwich with tomatoes
